Varieties of Olives and How to Tell the Difference Between Them
|
There are a lot of varieties of olives out there, so it can be tricky to tell the difference between them. Depending on the cultivar, the climate in which they grow, and the process of curing them, there are several different types to choose from.
The main difference between olives is ripeness. Unripe olives are green, while fully ripe ones are black. During the ripening process, the skin turns darker until it becomes black and hard. Most people assume that the only difference between green and black olives is ripeness, but this is not necessarily true.
Some olives turn black naturally due to oxidation during curing, while others get their color from additives like ferrous gluconate (E579). It is also common for farmers to add extra flavorings, such as rosemary or garlic before they start the curing process.
Aside from the various methods of curing olīves, there are many other things to remember when choosing a particular type. For example, some olives have a higher oil content than others and are therefore more popular as table olives or for oil production.
Another consideration is the shape of the olives. There are various shapes, including round, oval, and square.
There are even some different colors, such as dark red or purple. For instance, the Kalamata olives are deep and purple but have a shiny and wrinkled appearance and an intense fruity taste.
